gingerbread waffles from vegan brunch

Danni got me Vegan Brunch for Christmas this year. I was pretty excited!

So far we've only made the one thing (gingerbread waffles). These were tasty but the fresh grated ginger overwhelmed everything else, so it was less gingerbread waffles and more ginger waffles. The chocolate icecream didn't really go with this.

This book seems to be set out a lot better than Veganomicon, which I appreciate. The stock photos are a bit weird, almost like the spaces were set for photos and then no one got around to taking them. But overall everything seems cool.

Lots of other interesting looking things to try. I'm looking forward to doing something tofu-related for breakfast tomorrow. Or perhaps something potato related. Something delicious, anyway.

Cute! I hope you enjoy this book as much as we have - so far I think the tofu omelettes have been my favourite. Michael would probably recommend the chorizo sausages instead.

The waffle recipes have had me really, really tempted to buy a waffle iron but I really can't justify the extra appliance in our kitchen.

those waffle shapes are gorgeous - I love their chocolate bellies - I'd love a waffle iron but I have cindy's problem of space

Cindy, I'm hoping to try the tofu omelettes this weekend!

We fortunately already have a waffle maker, a gift from a family member some years ago. So it seemed like a good opportunity! And the penguin shapes are so adorable.

Sooooooooooo cute, where can I get a penguin waffle maker?

I think americans tend to put more ginger in gingerbread type recipes then we normally wou;d.

Cute waffles! I haven't tried those yet. Side note...It's funny how Australians put ice cream with waffles though. My boyfriend actually asked me, when I got a waffle maker for Christmas, "So what do we eat these with, ice cream?" It seems that Australians think we Americans like ice cream with our waffles? Is that true? Because I don't know any American who does, but maybe all of MY friends are weird...?

Anyway, if you're going to make something potato-y from that book, try the samosa potatoes! Yum...

Kristy this wafflemaker was a present a few years ago, but I understand it was from David Jones. So adorable!

Sarah, I would agree with your boyfriend that we assume Americans like ice cream with waffles. And then I would also assume most Australians are most familiar with waffles from Gelare, which is always waffle + icecream! Mmm icecream and waffle.

What would you eat with waffles?
