lemon and passionfruit curd cake

There were some free lemons floating around at work last week, so I nabbed a couple of them and tried out this lemon and passionfruit curd cake recipe by wanting kneading.

vegan passionfruit and lemon curd cake

This cake was so delicious, there is an export embargo on it, it is not to leave this house. It is so good!

The only change I made to the recipe was to use applesauce instead of no egg/egg replacement powder. I'm wondering if this made the cake slightly heavier than it should have otherwise been, but it made no notable difference to deliciousness. I baked it for about fifty minutes.

I am definitely going to make this cake again.

oh yippee!
im so glad you liked it!
your cake turned out so nice and golden, and the curd looks much creamier and nicer than mine.
looks like you've one upped me!

i liked it very much! i am thinking about making it again this weekend for my friend's birthday!

i was thinking before how i like the colour of your cake much more than mine! don't judge the colour of the curd though - my agar was green coloured!
